Final Word

When the jerky is done you will want to sample it - MMMmm!!!
Let it sit out for a little bit to cool off and then store in zip-lock type bags, jars, whatever. You can leave the container open for a day or so to allow any remaining moisture to escape. The meat is dried and will last indefinitely this way, but should be eaten within a month or so for best flavor (the flavor changes over time). You can store it in the refrigerator, or not. Most people just leave it out. Usually it will be eaten long before you have to worry about it getting old!

Jerky is great for trips, camping, hiking, sports events, or just as a snack. My kids just love it and consider it a real treat when fresh Jerky is in the house! Pioneers used to reconstitute it and use it in stews. Personally, I have not gotten around to trying that.

The really neat thing about making your own jerky at home is that when it turns out good, you can say "*I* made it good!" and nothing is better than having family and friends drooling over your special jerky recipe!
